Meat from dairy cows, rarely valued in American kitchens and restaurants, usually becomes dog food and fast-food burgers. When mature dairy cows (about six years old) are allowed to pasture longer, their fat, which normally goes into milk, returns to the muscles and makes the meat richer and more tender. But a few farms, including Mindful Meat in Marin County, Calif., and Butter Meat Company in Pavilion, N.Y., just west of the Finger Lakes, have been selling meat from culled dairy cows and convincing skeptics. At Stone Barns, dairy cattle are living out their golden years munching on Pocantico Hills grass before becoming the highlight of a tasting menu that can run more than $400 per person. All the beef dishes at the restaurant are made with culled dairy meat; at the Stone Barns store, frozen strip-loin steaks are $24 a pound.

Less obviously visible but equally impressive are the historical treasures, some more than 12,000 years old, that can be found underground. Unlike the Basilica, this underground chamber was completely forgotten about until less than 15 years ago. CNN —The total solar eclipse has come and gone, but sky-gazers have reason to keep looking up — a meteor shower will peak this week right before a full moon rises. The Lyrid meteor shower will be most active Sunday night through the early morning hours of Monday, according to the American Meteor Society. And April’s full moon, also known as the pink moon, reaches the crest of its full phase at 7:49 p.m. The pink moon actually got its moniker due to its annual appearance not long after the start of spring, much like its namesake, a hot pink wildflower called Phlox subulata that blooms in early springtime, according to The Old Farmer’s Almanac. Instead, an annular solar eclipse creates a “ring of fire” in the sky as the sun’s light surrounds the moon.

Six years ago, Illinois farmer John Ackerman didn't hire any contract workers at all. He enjoys mentoring young people, but says it's felt harder lately to justify hiring inexperienced workers when contract workers do the same hard, physical jobs faster and better. ☆ Blueberry grown in Australia breaks record as world’s heaviest

CNN —A giant blueberry that tips the scales at a whopping 20.4 grams (0.71 ounces) officially entered the record books this week. The fruit was picked on November 13 and the record for heaviest blueberry was confirmed this week, a spokesperson for Guinness World Records told CNN on Friday. It was grown in Corindi, New South Wales, Australia, by staff at blueberry grower Costa Group. The previous record for heaviest blueberry was held by a 16.20-gram (0.57-ounce) berry grown in Western Australia in 2020, according to Costa, which develops new varieties of blueberries that can be grown in different conditions. And in August 2019 a monster grapefruit broke two records and became the world’s heaviest and largest grapefruit by circumference.
